FONTANILLE
FONTANILLE (small water source in Occitan), is the name after the plots from which come the grapes to elaborate this cuvée, they are also the oldest vines of the domain 50 years for the Syrah and 90 years for the Grenache .
Blend: 85% Syrah ; 15% Grenache
Alcool : 14.5 %
Vinification : Vinified traditionally. The organics grapes are hand-harvested at optimum maturity, sorted, destemmed and crushed. Raised in new barrels for 18 months. Each grape variety is vinified separately and raised accordingly.
Tasting : A dark cherry-red robe, and a deep yet delicate nose of red fruit, blackberries, cherries and blackcurrants. On the palate there is great aromatic complexity, and well-integrated, silky-smooth tannins. This wine is distinguished by its elegance and finesse: well-balanced and with great length, it features a veritable cornucopia of red fruit, coffee, mint, liquorice and cocoa, notes, as well as secondary and tertiary notes.
Serve and cellaring : Serve between 16 and 18° C, open an hour before and carafe younger vintages. Can be aged for more than 20 years.
Pairings : red meats, white meat stewed or in sauce, game (not too strong, you’re told), beef or a duck breast.
